Veggie Fritters for Kids
I recently wrote a post, giving you 15 different ways to serve veggies to your kids. One of the ideas was making veggie fritters, so I thought I would share this recipe with you. My youngest loves these veggie fritters and even though he won't eat zucchini by itself, will happily much on these fritters. Fritters also make a great finger food for babies when you are introducing solids.
Step 1: Grate the Veggies
In this recipe I have used grated carrot, zucchini and chopped up cauliflower but you can use any vegetable. I tend to use whatever I have in the fridge. I have also used grated sweet potato, chopped up broccoli, corn and peas. About a cup of vegetables will make 4-5 small fritters. For those with a Thermomix, this step will be very easy. I just use a grater and takes me less than 5 minutes to grate everything.
Step 2. Add an Egg
The egg helps to bind the fritters together. If your child cannot have eggs, you could use an egg substitute. I would use 1 egg for every 1.5 cups of veggies
Step 3. Add Self-Raising Flour
I tend to use about a tablespoon of flour just to help bind the mixture. I have made them with both plain flour and self-raising flour and find they cook better using self-raising flour. Although I used white flour this time (as it was all I had), I often use wholemeal flour. For those who are gluten free, you could use any flour to bind the mixture.
Step 5: Mix
Give the mixture a quick mix to combine the ingredients.
Step 5: Pan Fry
The next step is to pan fry the fritters. I tend to put a small amount of oil in the pan so they don't stick and cook for a few minutes on each side. They don't need much cooking, just until they have browned on both sides
Step 6: Serve and Eat!
I tend to serve these as a side but you could serve them as a main meal with salad. Add in something like feta could up the protein for a main meal.
